This Mediterranean cucumber salad is a fresh, amazing, blend of delicious flavors! Full of fresh tomatoes, cucumbers, olives & feta it is loaded with Mediterranean flavor!Have you ever had a recipe come up with itself on your kitchen counter??
Maybe that sounds crazy, or maybe you’ve had an experience like I had when I came up with this salad!
You see a friend of mine had just given me a bag full of fresh delicious cucumbers out of her garden and they were sitting on my kitchen counter. Then I went grocery shopping and was unpacking my bags when I sat a can of black olives and a pint of grape tomatoes next to the cucumbers.
Ohhhhh what if I made a salad with those? What if I combined those and added a few more of my favorite ingredients and flavors… what if I made a Greek/ Mediterranean inspired cucumber salad? That could be genius. (not to toot my own horn here folks)
It also coincided with an especially hot week where the weather was not conducive to eating anything… the kind of heat that sucks the life out of your appetite and only cold food sounds even remotely good… so this salad?? Absolutely perfect!
If you want to turn this into a full meal you can easily toss some chicken or garbanzo beans into this Mediterranean cucumber salad to make it a light dinner or amazing lunch!

Ingredients
3- Cucumbers medium sizeInstructions
1-Pint Grape Tomatoes
1- Can Black Olives
1- Container Feta Cheese
1/2- Red Onion
2- Tbsp Olive Oil
2- Tbsp Balsamic Vinegar
1- tsp Dried Oregano
Peel and chop your cucumbers into bite size pieces.
Chop your grape tomatoes and black olives into bite size pieces.
Dice your red onion.
In a small bowl combine your olive oil, balsamic vinegar, and oregano
Place all your veggies and dressing in a large bowl, toss until everything is coated.
Sprinkle the top with feta.
